Beef short ribs sliced thin, marinated in honey, sesame oil, ginger & soy sauce. Seared on the grill & basted.
yield: 20 servings
1 cup sherry
1 cup rice vinegar
1 cup sesame oil
3/4 cup grated ginger
1/4 cup minced garlic
1/2 cup honey
1/4 cup brown sugar
2 cups soy sauce
1 cup sesame seeds
10 pounds beef short ribs, sliced across the bones about 1/4 inch thick
1 cup scallions for garnish
Mix all ingredients except the meat and the scallions. Let sit for up to 12 hours, refrigerated.
Add the short ribs, making sure to separate them for full marination effectiveness. Marinate for up to 48 hours.
Prepare a grill for direct cooking at high heat.
Place ribs on the grill, shaking off excess marinade first to reduce flare-up. Grill on both sides until cooked to medium doneness, 5 to 8 minutes.
